When selecting the type of wood to use we find that fruit and nut trees that will produce a sweeter and milder smoke which is best suited to white to pink meats such as chicken, pork & fish. Hardwoods like Hickory & Mesquite will create a stronger smoke that is best for red meats. Consider what the tree produces and that will give you an idea of the type of smoke to expect.

Smoking chips are the most commonly used and are readily available option for smoked food cooking to get that rich and penetrating flavour. They are made from small scraps and shavings of wood which when soaked in water for about 30 minutes generate steam that adds moisture and heat to the smoking process and prolongs burning time. The key with wood chips is to deny the wood of oxygen so it smoulders and smokes.
